The flavor profile of any tea is determined by three components: origin, variety of the plant, and processing method. For Ruby No. 18, each of these aspects is noteworthy.

During their time on the island, the Japanese discovered that the Sun Moon Lake area is ideal for tea cultivation. The largest freshwater lake on the island is well-protected from gusty winds by the Shuishe and Dajian mountains. The climate is quite moderate, with no sharp fluctuations and adequate humidity.

The TTES #18, also known as Ruby Red Tea, is one of the treasures developed by Taiwanese tea farmers. It is a hybrid of Yunnan and Burmese Camellia Sinensis var. Assamica and a wild Taiwanese variety of the tea plant.

The bouquet: on one brew, it offers pure honey with spices and menthol freshness in the aftertaste, while on another, it presents berry, cloudberry, and caramel notes, with hints of cinnamon and a light tartness. The tea leaves are carefully roasted and kept as intact as possible, allowing for long infusions without bitterness.

Effect: it warms, invigorates, and provides energy.

How to brew: any tea ware will suffice. Porcelain enhances the aroma, clay adds depth to the flavor, and glass is convenient for brewing tea in the office. Ruby is excellent for steeping. Use boiling water.
